CABERNET FRANC DOC "V. Azzanello" It is produced from grapes of the vine with the same name, cultivated in Azzanello. It has an intense, purple red colour. On the nose it is rich and complex: spices (pepper, cinnamon, clove), liquorice notes, flowers (violets, geranium) and red fruit flavours. On the palate it is full-bodied, fine and elegant. There is a good balance between acidity and tannins. Clear and persistent varietal mark, the red fruit flavours come back (blackberry, black cherry, black currant), leaving way to a warm, intense finish.
Red-wine process of hand harvested, ripe grapes, picked up in perfect health conditions. The grapes are processed cold for 3-5 days. Fermented with the skins for at least 15 days at controlled maximal temperature of 25-28° C, the grapes undergo during the first 8 days of fermentation several "delestage". A further period of maceration takes place for 5-10 days. Refinement takes place for a year mostly in wooden tanks and partly in barriques. Another period of refinement is carried out in steel tanks until bottling. The bottles are then stored in horizontal position, until being sold.
