My "Grigio" should represent the wealth of the vine variety Pinot Grigio. Part of the grapes undergo a fermentation with the skins giving the wine more structure, complexity and an irresistible colour. It is an attractive wine with character. A wine that makes one curious only by looking at its colour: an auburn colour with brilliant, delicate salmon pink nuances. I decided to use only natural wine-making processes: the wine is completely fermented in steel tanks, without adding any kind of clarification nor filtration, and lasts 17 months. Through the contact with the yeast -"sur lie"- it gains structure and rich aromas which are typical of this vine variety cultivated on clay soil. Its bouquet is very complex and it needs some time to open up in the glass. This wine shows perfumes of dry fruit, hazelnut, ripe apple and mineral notes, typical of Pinot Grigio grape. I like its velvety taste in the mouth which matches on a second moment with its agreeable acidity. The alcoholic content is proportionate and supports the persistent aftertaste that reminds one of honey and floral perfumes. his wine is obtained from the vine variety Pinot Grigio, cultivated in the vineyard of Visinale (Pasiano), on a sunny ground with lean clay soil.
