SPARKLING WINE - This sparkling wine derives from the vinification of Pinot Bianco (70%), Chardonnay (20%) and Pinot Nero (10%) grapes. First fermentation occurs inside steel vats for 3 weeks at controlled temperature using the "batonage" method. The wine becomes bubbly during the second fermentation inside low-temperature pressure tanks (charmat method). This process confers the wine its distinguishing characteristics.
