RISOTTO ALLA GRAPPA

Ingredients:
½ onion, 100g butter, 300g rice (Arborio, Vialone Nano), 1 glass of dry white wine, 3 glasses of bright grappa, about 1l vegetable stock, 100g grated parmesan, salt, pepper.

Chop the onion very finely. Melt 50g butter in a pan and cook briefly the chopped onion. Add the rice into it and stew the whole thing by stirring it. Douse it with the wine and 1 glass of grappa. Keep on stirring the rice, adding gradually the vegetable stock until the rice is cooked. At the end add to the finished risotto the rest of the grappa, butter and the grated parmesan. Salt and pepper the risotto as you prefer.
